Happy Gilmore Girls season!! & fall marathon season!! I've missed you. Just a week of food and running (i’m 1.5 months out from my first marathon yay). Just sharing some tips on getting started, the importance of fuelling, lots of yummy recipes, and also chatting about whether my relationship with running is 'unhealthy' and the changes I've seen with my body, weight and mindset!! best pumpkin bread:
➥Pumpkin spice protein pancakes:
1/2 cup greek yogurt
1/4 cup pumpkin puree
large egg
vanilla extract
1/3 cup oats
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1 tsp baking powder
a pinch of salt
Optional: 1/2 serving protein powder
Top with Greek yogurt, cinnamon, and drizzle with as much maple syrup as you desire 🫶🏻🍁
➥Cinnamon raisin greek yogurt bagels (makes 2 bagels)
½ cup greek yogurt
¾ cup flour
⅓ tsp baking powder
½ tsp cinnamon
¼ cup raisins
Combine, split in half, roll into balls, shape into bagels. Bake at 375F for ~20 mins

➥Apple cinnamon cookies
➥sticky date baked oats (4 servings, recipe by@dietitianrose)
2-4 large Medjool dates (pitted)
2 cup rolled oats
1/4 cup OR ~35g vanilla plant protein powder
OR 1/4 cup wholemeal plain flour/ flour of choice*
1/2-1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp bicarb soda
1.5 cups milk of choice
1/2 cup water
Topping:
2 tbsp peanut butter
1 tsp maple syrup/ molasses/ honey
¼ cup milk
microwave the pitted dates, water, and baking soda for ~1-2 minutes (or until dates soften) and mash with a fork to combine (CAREFUL: HOT!!) or you can add hot water to dates, let it sit for a few minutes before mashing.
Mix all ingredients with date, bake at 350F for 35- 40 minutes
Add topping

⅓ cup oats
1 banana mashed
cinnamon
salt
Add mixture to greased pan, flatten, and break up into pieces until cooked
Serve with fruits, greek yogurt, PEANUT BUTTER or any thing you like!

(before serving, add layer of greek yogurt, peanut or almond butter and layer melted chocolate w. coconut oil and top with sea salt)
